Nelson Cenci “L’Insolita Annata” Millesimato Brut

70% Chardonnay, 20% Pinot Bianco, 10% Pinot Nero

Special edition, with just 1,500 bottles produced in 2011.

Characteristics

Pale straw-yellow, with golden reflections and subtle perlage. Immediately opens with sweet, toasted, crusty bread notes on the nose, followed by acacia flowers and fresh, fleshy apple, white peach, white mulberry, pineapple, orange and cedar notes, with a distinctly mineral, chalky sensation running through the bouquet. Fresh, creamy, full-flavoured mouthfeel, with medium body and good balance. At the back of the throat, consistent with the initial impression, with the citrus and mineral notes coming through more clearly. Pleasing almond finish.

Alcohol content: 12,5% vol.


Internal pressure: inferiore a 6 bar


Sugar residue: lower than 6 bar


Sulphites: less than 70mg/l


Colour: Intense straw-yellow with golden reflections


Pairings: Can be enjoyed throughout a meal. Ideal with elaborate fish dishes

Production area
Franciacorta – Cologne. Vineyard located on the slope of Monte Orfano, South-West exposure.

Type of earth
Ancient banked colluvial soil on a rocky substrate of conglomerate gravel.

Vinification technique
Only must from the first pressing used. Temperature-controlled fermentation. Second fermentation in the bottle, followed by ageing on the lees for at least 50 months.

Storage
Store in a dry place away from the light, at a controlled temperature of lower than 20°C.

Sylvoz and Guyot.
